I'm a dad-to-be in Spain cooking for my wife, Xing, as she navigates gestational diabetes while we wait for our baby boy, Arthur. Every meal is a little experiment — some triumphant, some questionable — but all of them are real. No perfection, no pressure. Just proper food that keeps us sane and the numbers steady.

When Xing was diagnosed with GD, I panicked… and then grabbed a frying pan. Overnight, our simple meals turned into maths problems. Between Chinese comfort dishes, Spanish supermarket roulette and my British cravings, we've learned to improvise.

This isn't a polished food blog — it's our kitchen diary. We try things, we adjust, we laugh, we sulk, and then we try again. Because right now, cooking is how I show love. And honestly? It's helping us feel less alone in all this.
